Cauliflower Rice

  • Half a head of cauliflower
  • 1 tablespoon coconut, grapeseed, or olive oil
  • Half a yellow onion, diced
  • 1 clove garlic, minced
  • Salt & pepper to taste
  1. Rinse cauliflower and break it away from the main stem in large chunks.
  2. Using a cheese grater or food processor, grate cauliflower to a coarse texture.
  3. Heat the oil in a skillet over medium heat.
  4. Sauté the onion and garlic for 3-4 minutes or until the onion is relatively translucent.
  5. Add in the cauliflower rice and continue to sauté for 4-5 minutes. Season with salt and pepper and serve.
